Every great weeknight dinner has a secret: the pan sauce. Once your protein is seared, the browned bits left behind are pure flavor. All you need to do is lift them up.
The formula
Aromatic + liquid + fat. Soften a spoon of shallot or garlic in the pan, pour in a splash of stock, wine or even water, and scrape like you mean it. Let it bubble down by half, then swirl in a knob of cold butter off the heat.
Make it yours
Add mustard for tang, a spoon of miso for depth, or a squeeze of lemon right at the end. Taste, adjust, and spoon it over everything.
